Semester 1

Topics: Overview of nutrition science, basic concepts of diet and health, introduction to macronutrients and micronutrients, types of carbohydrates, protein structure and function, types of dietary fats, etc.

Topics: Water-soluble and fat-soluble vitamins, major and trace minerals, their functions, and deficiency diseases, basal metabolic rate, nutritional needs during different life stages, cardiovascular disease, etc.

Topics: Methods of dietary assessment, nutrition guidelines, and food labelling, vegetarianism, food allergies and intolerances, principles of food safety, examination of current trends in nutrition, such as plant-based diets, supplements, etc.
